Pisco is the national spirit of Peru. It is technically an unaged brandy distilled from freshly pressed grape juice. In Peru, Pisco carries an
internationally recognized "denomination of origin" (DO) and is protected by law. The "DO" states that only eight grape varieties grown and
distilled in five specific regions of the country can be labeled "Pisco, made in Peru". Of the eight "uvas pisqueras" (grapes for pisco), there are
three white grapes and five red grapes.

In addition, the DO outlines the process for the production of pisco. Pisco can only be single distilled in copper pot stills (alembiques).
The fermentation and distillation process can be either puro or most verde. Puro means that a single grape variety or a blend (Acholado) was
fully fermented and then distilled. Mosto Verde (green must) can be a single varietal or a blend where fermentation has been interrupted.
This means that residual natural sugar of the grape(s) remain, offering a smoother and silkier spirit.

Pisco is a versatile spirit. Each of Bodega San Martin most verde pisco, distilled from the different "uvas pisqueras", offers unique profiles which
can be enjoyed neat or in a cocktail. Bodega San Martin brandy, mosto verde piscos aged in American and/or French barrels, offers another
level of unique expressions of the "uvas pisqueras".

Bodega San Martin piscos and brandy are distilled at the family-owned distillery, Fundo y Bodega San Martin, located in the Ica valley of Peru.
The distillery is known for its traditional method of pisco distillation. The master distiller, Fernando Orellana, learned the art of distillation from
his great-grandmother, Etelvina, and his great-aunt, Rosa Victoria. He honors these two women by maintaining the tradition of distilling premium
quality spirits.
